I beg to differ lean meat is often less tasty, although it is better for you. Plus he is old, so he would probably be tough. Although if you would make that sacrafice for the human race they would probably be quite grateful.

FYI supposedly the tastiest beef is referred to as colby beef and is marbled with fat. This meat is very expensive due to the way these cows live. Colby cows are given massages and beer along with other special treatment to produce this high quality meat.
