How to edit a jpg image which contains many tables and text which I have to edit for my upcoming project?

Probably Photoshop, or Gimp if you're running a linux box, however any text in a .jpg file isn't going to be easily removed.

Unless you can get your hands on the original .psd file, I wish you good luck on that one!

Any text in a jpeg is rasterized, meaning no longer editable. You can remove it but you'll need a program like the ones Crot mentioned.
