For me its "PainKiller" By judas priest. Its quick, solos, and one of the best voices in metal in my mind.
Normally I am keen on the death vocals but this song has got it all. The fast drums, the good bass, and lovely solo placement. K.K. Downing and Glen Tipton are amazing guitarists. The screaming followed by solos are amazingly well put together and it keeps the good steady flow of Metal all the way through. Just when you think the song will end it gives you one more little burst and then ends.
So to me A song that is metal in its essence is "Painkiller" by judas priest.
Ripper Owens also does a good job on it.
